Watch what happens next. The server’s eyes go up and to the left. She’s running the recipe in her head — the sauce, the oil it was fried in, the garnish, the thing the last cook swapped in on Tuesday. Maybe she knows. Maybe she asks the kitchen and the kitchen’s slammed. Maybe she says “I think you’re fine,” and everybody at the table hears the word think.
That one guess is the most expensive sentence in your restaurant. Get it wrong on a severe allergy and you’re not looking at a comped plate — you’re looking at a health-department fine, a lawsuit, an ambulance, a headline. And the person carrying all of that risk is your busiest, most overwhelmed server, working off memory.

And here’s the one that should stop every owner cold: in that restaurant study, about 54% of the guests who had a reaction had already told the staff about their allergy. They did everything right. The old way failed them anyway — because “tell your server” is only as good as one busy server’s memory on the worst night of the week.

It answers off the real ingredient panel — not somebody’s memory

Served reads every prep down to the ingredient panel printed on the case you actually buy — the real supplier label, behind the brand in your walk-in. A guest picks their allergy, and every plate comes back with a straight answer off that panel: it has it, the panel says it doesn’t, the panel says may contain so we say no, or there’s no panel yet so we don’t guess. When we’re not certain, the answer is no. That’s the only honest way to do it.

Now the other half. You blow a tap at nine o’clock. You run out of chicken mid-rush. On a normal night that’s a whiteboard note, a shouted “we’re out of—,” and three tables who find out the hard way.
